A bottle worth remembering.
Truffle began the way most good ideas do. Over a bottle worth talking about. We'd been travelling. We'd been eating in small places that mattered. Rooms where nobody explained the wine unless you asked, and where the cheese was cut in front of you.
We wanted one of those here.
So here we are. In Lymm. In a room we've cared about down to the light switches. Pouring wine from people we've met, cutting cheese from farms we've stood in, and pretending we invented the pairing of a good Cheshire with a glass of Gamay.
Four small ideas we won't let go of.
Curiosity over expertise.
The best wine in the room is often the one you haven't heard of. That's the fun of it.
Small producers, first.
Families, growers, farmers, converts. People whose names are on the bottle for a reason.
Slow over fast.
We don't turn tables. We won't hurry a plate. If your afternoon runs long, so much the better.
Warm over polished.
Candles, not spotlights. Records, not playlists. Enough polish to feel looked after; not so much that you can't relax.

A small team, all obsessed with something.
Cheese, orange wine, the exact right sourdough. Someone here has strong opinions about all of it, and probably wants to share one with you.
